Clean the strawberries, cut them into pieces and puree in blender. Bring water to a boil with sugar, remove from heat and add the gelatine previously soaked in cold water. Combine the mashed strawberries in syrup, whipping cream (not too much) and incorporate it gently into the mixture. Pour into a mold (or portion) and place in the refrigerator for a few hours. Chocolate sauce: boil the cream, remove from heat and pour the chocolate into small pieces, stirring with a whip. If it is too thick, add a little cream. Vanilla sauce: bring the milk to a boil with the vanilla. Mix the egg yolks with the sugar and add the cornstarch. Pour the milk over the egg mixture and stir quickly, put everything on fire and bring to 85 minutes, then strain and cool.
N.B. the sauce should not boil. Enter the sweet on a plate and decorate as desired.
